Here are just a few reasons why you should eat more broccoli. Broccoli, considered a nutritional powerhouse, is high in fiber, antioxidants, vitamin A (supports eye health), vitamin C (boosts immune system, promotes collagen production, wound healing, and iron absorption), supports cardiovascular health, AND… is a good source of calcium.
The deli at Fred Meyer (a local grocery store in Seattle, WA) offers a version of this broccoli salad once in a while. From what I can remember, it has bite-sized pieces of broccoli, shredded kale, sunflower seeds, and raisins tossed together in a lightly sweet dressing. This was my first attempt at making what has come to be one of my favorite salads.
Broccoli Crunch Salad
Ingredients:
Dressing:
-1 cup mayonnaise (plant-based or regular, I used Kewpie)
-1 teaspoon soy sauce
-3 tablespoons apple cider vinegar or white wine vinegar
-1 tablespoon chopped garlic (I used pickled)
-3 tablespoons granulated sugar
-1 tablespoon sesame oil
-pinch of freshly ground black pepper
-1/2 teaspoon salt
Salad Ingredients:
-4 cups broccoli florets, broken into bite-sized pieces
-12 oz bag of broccoli slaw
-1/2 cup sunflower seeds
-1/2 cup raisins
-1/2 cup chopped green onion
Directions:
Mix the ingredients for the dressing together in a medium size bowl. Whisk until smooth. Set aside. Place the salad ingredients in a large bowl. Pour 2-4 tablespoons of the dressing over the salad, and toss to coat. Add more dressing as needed, according to taste. Refrigerate for at least 30 minutes. Serve chilled.
